Answering my own question to help others.

Using SolScan to look at the associated token address created after minting a token, you can see the associated token account in the

"tokenAddress": "aaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaaa",

part of the .create().run() output.
